What he was aiming for was what is the highest potential each one of the revenue streams could be.
It didn’t matter if each revenue stream was already profitable. He was looking for the ceiling of what he truly felt sales could be.
He took a look at all the restaurants that were in the hotel, and he then asked, “How high is high here?”
In the MGM Grand they had a very successful profitable flagship restaurant doing about $4 million a year in revenues.
Here’s the interesting point... its sales weren’t broken. But Gamal was determined to figure out how high the revenues could be in this already profitable restaurant.
He would spend a lot of time in the evenings at the entrance to the hotel, watching people come out of the hotel and get into taxis and limos and he would just ask them, “Where are you going tonight?”
They’d say things like, well, we’re going to Spago at the Bellagio or we’re going to Nobu at Caesars or we’re going here or there naming all of these destination restaurants that they’re going to on the strip.
All these people are leaving the hotel to go somewhere else specific to spend their money.
